Ingredients
  • 1 kg ripe tomatoes cut in chunks.
  • 2 big onions roughly chopped.
  • 4 cloves garlic roughly chopped.
  • 1 tbs oregano leaves .
  • 1 tbs thyme leaves.
  • 1 tbs rosemary leaves.
  • 4 basilicum leaves.
  • olive oil.
  • cayenne pepper or tabasco or chilli (optionnal).
  • salt.
  • pepper from the mill to taste.
  • 1 tbs balsamico vinegar.

Directions
  1. Chop the aromatic herbs.
  2. Preheat oven to 200 C.
  3. Put 1 tbs olive oil in the oven tray and devide with a brush or you hand.
  4. Put tomato chunks in tray, top with onion , garlic and herbs, add salt and pepper to taste, add balsamico and 2 tbs olive oil, mix well.
  5. Bake in oven 40 min, strirr twice.
  6. Take out and let cool.
  7. Mix in the blender till you have a smooth sauce, taste again with salt and pepper.
  8. If you like it hot then add 1 ts tabasco or 1 ts cayenne pepper or ground chili.
  9. Using parsley, celery, mustard or lemon juice will give you also a tasty tomato sauce, use your phantasy.
