How to make it

  • Rub albacore steaks with garlic, pepper and olive oil then grill over hot coals 4 minutes per side.
  • Add salt to taste then serve hot with avocado sauce.
  • Avocado Sauce:
  • 3 tablespoons chunky salsa
  • 1 cup milk
  • 1 medium ripe avocado
  • 1 small lemon
  • 1/2 teaspoon salt
  • Dissolve salsa in milk and bring mixture to a boil then reduce heat but keep warm.
  • Peel and puree avocado in a blender or by hand with a fork and add lemon juice.
  • Add the avocado puree to the warm milk mixture just before serving.
  • Season with salt then serve immediately.
