Ingredients
  • 2 lbs copper river salmon
  • 1/2-1 cup butter (or however much you feel comfortable with)
  • salt & pepper to taste
  • Chardonnay wine - everything is better with wine = )
  • 1 sweet yellow onion - Vidallia or Mayan
  • 1 head garlic

Directions
  1. Peel and chop garlic and onion coarsely.
  2. Soften butter, Rub salmon with butter and then salt well (salt makes things taste good).
  3. Sprinkle with pepper and press the onions and garlic onto the salmon and place in a shallow glass plate with the rest of the butter (melted) and Chardonnay, enough to almost cover the fish. Marinate for at least an hour (as usual, the longer the better).
  4. Grill on indirect heat until done and serve immediately (remember it's about 10 minutes an inch, but that assumes a 400 degree grill, so adjust accordingly).
  5. You will impress people!

This sounds so good!!! The salmon is just starting to run up here, right now it's the kings, but I do see the grocery stores are running specials on the Coppers. Can't wait to stock my freezer!

Oh yes, Copper River salmon - the BEST!! I refuse to eat that fake Atlantic farm-raised stuff - wild caught only please. (I used to be a Seattlite).

Love fresh caught Salmon! Tops on this recipe!*wink*

A+ on this one!
