How to make it

  • Peel and chop garlic and onion coarsely.
  • Soften butter, Rub salmon with butter and then salt well (salt makes things taste good).
  • Sprinkle with pepper and press the onions and garlic onto the salmon and place in a shallow glass plate with the rest of the butter (melted) and Chardonnay, enough to almost cover the fish. Marinate for at least an hour (as usual, the longer the better).
  • Grill on indirect heat until done and serve immediately (remember it's about 10 minutes an inch, but that assumes a 400 degree grill, so adjust accordingly).
  • You will impress people!

    Oh yes, Copper River salmon - the BEST!! I refuse to eat that fake Atlantic farm-raised stuff - wild caught only please. (I used to be a Seattlite).

    This sounds so good!!! The salmon is just starting to run up here, right now it's the kings, but I do see the grocery stores are running specials on the Coppers. Can't wait to stock my freezer!
