This is easy and real tasty the sweet potatoe adds a unique flavour

Ingredients
  • 500 gms Sweet Potato
  • 185gms mushrooms
  • 1 onion chopped
  • 2 tablespoon butter
  • 1 teaspoon Vegeta or a stock cube (optional)
  • 2 tablespoons corn flour
  • 1cup cream
  • S/p
  • Pastry
  • Grated cheese

Directions
  1. Peel sweet potato cook in microwave 8 mins
  2. Fry mushroom and onion in butter till just tender add vegeta or stock cube(optional) add flour and mix well
  3. Gradually stir in cream and continue cooking until sauce boils and thickens
  4. Season
  5. Line a pie dish with pastry arrange the sweet potato over the base of the dish pour over mushroom sauce and sprinkle with cheese
  6. Bake 200ºCfor about 30 mins
