How to make it

  • With a knife or cookie cutter, cut each piece of bread into a large circle.
  • Cut a 1 1/2 inch (4 cm) hole in the centre of each circle and toast the slices.
  • Melt the butter in a large frying pan over medium-low heat.
  • Lay in the toast and place 1 T of sour cream in each hole.
  • Sprinkle with parsley.
  • Break an egg on top of the sour cream and sprinkle with salt and pepper.
  • Fry, without flipping, to desired consistency.
  • (if egg is to be cooked hard, fry on a lower heat and cover.)
  • Serve at once.
