Fried Ox Eyes

- 4 slices bread shopping list
- 2 T butter shopping list
- 1/4 c sour cream shopping list
- 1/4 c chopped fresh parsley shopping list
- 4 eggs shopping list
- salt & pepper shopping list
How to make it
- With a knife or cookie cutter, cut each piece of bread into a large circle.
- Cut a 1 1/2 inch (4 cm) hole in the centre of each circle and toast the slices.
- Melt the butter in a large frying pan over medium-low heat.
- Lay in the toast and place 1 T of sour cream in each hole.
- Sprinkle with parsley.
- Break an egg on top of the sour cream and sprinkle with salt and pepper.
- Fry, without flipping, to desired consistency.
- (if egg is to be cooked hard, fry on a lower heat and cover.)
- Serve at once.
