Apricot Bars

Great tasting apricot cheese bars.
Ingredients
- 1 pkg(16oz) pound cake mix shopping list
- 4 eggs shopping list
- 1/2c butter,melted shopping list
- 2tsp vanilla,divided shopping list
- 1c chopped dried apricots shopping list
- 1 pkg.(8oz)cream cheese,softened shopping list
- 2c confectioners sugar shopping list
- 1/2c apricot preserves shopping list
- 3/4c flaked coconut shopping list
- 3/4c sliced almonds shopping list
How to make it
- In large bowl,combine cake mix,2eggs,butter and 1 tsp vanilla;beat till well blended. Fold in dried apricots. Spread into greased 15x10x1" baking pan;set aside.
- In another bowl,beat the cream cheese,conf. sugar,preserves and remaining vanilla. Add remaining eggs;beat on low speed just till combined. Gently spread over cake batter. Sprinkle with coconut and almonds.
- Bake at 350 for 25-30 mins or till golden brown. Cook on wire rack. Cut into bars. Refrigerate leftovers.
