Zucchini Parmesan Recipe
Yummy beef and zucchini casserole that tastes great and looks beautiful. Serve with bread sticks and a salad

Ingredients
  • 1 1/2 lbs lean ground beef
  • 1, 26 oz can, favorite sphaghetti or tomato sauce
  • 6 1/2 cups sliced 1/2 inch thick zuchinni- about 4 medium
  • 1 cup grated parmesan cheese
  • 3 cups shredded mozzarella cheese
  • Italian seasoning to taste
  • Fresh basil leaves for garnish
  • Additional tomato sauce for topping pieces

Directions
  1. Cook ground beef in skillet and drain off fat.
  2. Add the tomatoe sauce and seasoning to taste
  3. In a 3 qt baking dish layer zucchini, half the meat sauce mixture and half the cheeses
  4. Repeat layers but leave out the remaining mozzarella cheese
  5. Cover and bake 350F about 45 minutes.
  6. Uncover, add the remaining mozarella cheese and bake 5 minutes more
  7. Let stand 5 minutes before cutting into squares.
  8. Garnish each piece with additional sauce and basil leaves
