Quick Gourmet Chicken Casserole Recipe
Another easy and elegant chicken casserole. Nice to make ahead, refrigerate for a day, and then pop in the oven. Serve with green salad and rolls. Bon Apetit!

Ingredients
  • 2 boxes Uncle Ben's long grain and wild rice mix
  • 2 cups diced cooked chicken
  • 1 8oz. carton sour cream
  • 1 can cream of chicken soup
  • 1 stick butter
  • 2 8 oz. packages fresh whole mushrooms
  • 1 onion, diced

Directions
  1. Preheat oven to 350.
  2. Cook rice according to package directions.
  3. Meanwhile, clean mushrooms and trim stems. Quarter mushrooms.
  4. Melt buttter in saucepan, saute diced onion and mushrooms until onions are translucent and mushrooms are tender.
  5. In a large bowl, combine cooked wild rice, chicken, sour cream, chicken soup, and sauted vegetables. Mix well.
  6. Place all in a 2 quart casserole dish that has been sprayed with non-stick cooking spray.
  7. Bake at 350 for 45 minutes covered.
  8. Uncover and cook an additional 15 minutes.
