Alaskan Salmon and Avocado Pasta Salad

- 6 ounces dry pasta shopping list
- 14-3/4 ounce Alaskan salmon shopping list
- 2 tablespoons French dressing shopping list
- 1 red bell pepper thinly sliced shopping list
- 3 tablespoons cilantro chopped shopping list
- 1 lime juice and rind grated shopping list
- 1 tablespoon tomato paste shopping list
- 1/2 cup sour cream shopping list
- 1/2 teaspoon paprika shopping list
- 1 bunch green onion thinly sliced shopping list
- 2 tablespoons mayonnaise shopping list
- 3 ripe avocados diced shopping list
How to make it
- Lettuce leaves to serve on
- Cook pasta according to package directions then drain well and toss with French dressing.
- Allow to cool then drain and flake salmon.
- Add to pasta with green onions, sliced bell pepper and cilantro.
- Whisk together lime juice and grated rind, mayonnaise, sour cream and tomato paste.
- Mix until thoroughly combined then toss pasta with dressing and season with salt and pepper.
- Cover and chill then right before serving gently toss avocados into salad.
- Spoon salad onto a bed of lettuce leaves then sprinkle with paprika for garnish.
