Alaskan Salmon And Avocado Pasta Salad Recipe
This is a recipe that comes from my good friend Belinda. She serves this to us when we play bunco at her house and it is always a huge hit. Bursting with great flavors especially if you like salmon.

Ingredients
  • 6 ounces dry pasta
  • 14-3/4 ounce Alaskan salmon
  • 2 tablespoons French dressing
  • 1 red bell pepper thinly sliced
  • 3 tablespoons cilantro chopped
  • 1 lime juice and rind grated
  • 1 tablespoon tomato paste
  • 1/2 cup sour cream
  • 1/2 teaspoon paprika
  • 1 bunch green onion thinly sliced
  • 2 tablespoons mayonnaise
  • 3 ripe avocados diced

Directions
  1. Lettuce leaves to serve on
  2. Cook pasta according to package directions then drain well and toss with French dressing.
  3. Allow to cool then drain and flake salmon.
  4. Add to pasta with green onions, sliced bell pepper and cilantro.
  5. Whisk together lime juice and grated rind, mayonnaise, sour cream and tomato paste.
  6. Mix until thoroughly combined then toss pasta with dressing and season with salt and pepper.
  7. Cover and chill then right before serving gently toss avocados into salad.
  8. Spoon salad onto a bed of lettuce leaves then sprinkle with paprika for garnish.
