WEEKNIGHT PORK CHOPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mahan Estate in Grand Saline, Texas in 1987.

Ingredients
  • 6 boneless pork loin chops
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 1 cup orange juice
  • 1/4 cup dry sherry
  • 1 package dry onion soup mix
  • 1 cup chopped fresh mushrooms
  • 1/4 cup whipping cream

Directions
  1. Sprinkle chops evenly with salt and pepper.
  2. Cook in hot oil in heavy skillet over medium heat for 2 minutes per side.
  3. Add orange juice and next 3 ingredients then bring to boil.
  4. Cover then reduce heat and simmer 15 minutes.
  5. Transfer chops to a serving platter and keep warm.
  6. Reserve drippings in skillet.
  7. Stir whipping cream into reserved drippings then cook over medium high heat.
  8. Stir constantly 5 minutes then serve over chops.
