Tomato and Tarragon Muffins

- 1/4 cup oil shopping list
- 2 eggs shopping list
- 1/2 teaspoon grated lemon rind shopping list
- 1 diced white onion shopping list
- 2 tablespoons tomato paste shopping list
- 2 tablespoons chopped fresh parsley shopping list
- 1 cup milk shopping list
- 2 tablespoons chopped fresh tarragon shopping list
- 1 teaspoon chili sauce shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon granulated sugar shopping list
- 1 cup grated sharp cheddar cheese shopping list
- 3 cups self-raising flour shopping list
- 1/2 cup grated cheddar cheese shopping list
- Filling: shopping list
- 1/2 cup cream cheese shopping list
- 2 tablespoons mayonnaise shopping list
How to make it
- Preheat oven to 400 then prepare pans.
- Thoroughly blend oil, eggs, rind, onion, tomato paste, parsley, milk, tarragon, chili sauce, salt, sugar and cheese together until well combined.
- Add flour and mix well then place in muffins pans.
- Sprinkle with cheese then bake 30 minutes.
- Remove from pans when slightly cooled.
- Split muffins and fill with cream cheese mixture.
