Salmon Tortilla Recipe
SALMON TORTILLA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Garza Estate in Royse City, Texas in 1994.

Ingredients
  • 1 tablespoon butter
  • 12 ounces boneless skinless salmon chopped
  • 8 ounces smoked salmon tidbits chopped
  • 2 cups thinly sliced potatoes parboiled
  • 1/2 teaspoon minced garlic
  • 1/4 cup thinly sliced onion
  • 10 eggs well beaten
  • Sour cream
  • Chopped chives

Directions
  1. Preheat oven to 350.
  2. In large skillet heat butter over medium high until hot then stir in all ingredients except eggs.
  3. Cook over medium heat until vegetables are cooked then cool slightly.
  4. In large bowl combine salmon mixture with eggs and mix gently.
  5. Heat ovenproof nonstick frying pan over low heat until hot then pour in tortilla mixture.
  6. Cook until mixture begins to set around edges.
  7. Place frying pan in over then bake until eggs are set in center.
  8. Garnish with sour cream and chopped fresh chives.
