Tune Crouquettes

- 4 cups cooked brown rice shopping list
- 1 large tin tuna in olive oil, drained, oil reserved shopping list
- 1 bunch dill, chopped finely shopping list
- 2 eggs shopping list
- 1/2 bunch spring onions, finely sliced shopping list
- 1 tin corn kernels, drained shopping list
- 2 tablespoons good quality mayonaise shopping list
- salt and pepper to taste shopping list
- 2 cups uncooked polenta for rolling croquettes in shopping list
How to make it
- cook brown rice well, allow to cool until just warm.
- add all other ingredients, using clean hands mix through well, squeezing and mincing.
- Add some of the resevered oil if not sticking together.
- Roll 1/2 cup amounts in wet ahnds and form into croquette shape. Roll in uncooked polenta and place on baking tray.
- once all done cook in moderate over for 20 mins.
