  • 4 cups cooked brown rice
  • 1 large tin Tuna in Olive oil, drained, oil reserved
  • 1 bunch dill, chopped finely
  • 2 eggs
  • 1/2 bunch Spring onions, finely sliced
  • 1 tin corn kernels, drained
  • 2 tablespoons good quality mayonaise
  • salt and pepper to taste
  • 2 cups uncooked polenta for rolling croquettes in

Directions
  1. cook brown rice well, allow to cool until just warm.
  2. add all other ingredients, using clean hands mix through well, squeezing and mincing.
  3. Add some of the resevered oil if not sticking together.
  4. Roll 1/2 cup amounts in wet ahnds and form into croquette shape. Roll in uncooked polenta and place on baking tray.
  5. once all done cook in moderate over for 20 mins.

These are different,I fry tuna patties with cracker crumbs,but I do like the rice,corn in this recipe,and the big plus is, you bake.
