Rosemary Turkey Meatloaf

- 1 1/2 pounds ground turkey breast - Jennie-O All Natural Extra Lean shopping list
- 2 cups - 4 slices of fresh bread crumbs, sugar Free bread, 100% Whole Wheat by: pepperidge Farm shopping list
- 1 cup onion, chopped shopping list
- 1/4 cup egg substitute shopping list
- 1/4 cup balsamic vinegar shopping list
- 1/2 cup non-fat milk shopping list
- 1 clove garlic, minced shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- 1 1/2 tablespoons chopped fresh rosemary shopping list
- 1 cup canned tomato sauce shopping list
- 3/4 cup brown sugar shopping list
- 1 tablespoon Dijon mustard shopping list
How to make it
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- To make the fresh bread crumbs grate the bread until you have crumbs. You can use a food processor if you have one and hate using your grater. Stale bread works best because it is already crumbly. You stale up fresh bread by barely toasting it so that it is firmer but not browned.
- In a large mixing bowl, mix together the ground turkey, bread crumbs, onion, egg and milk. Season with balsamic vinegar, salt, pepper and rosemary. Press into the prepared pan.
- Blend together the tomato sauce, brown sugar and mustard; pour evenly over the top of the loaf. Bake for 1 hour

Excellent dish, I incorporated the tomato sauce, brown sugar and mustard mixture in to the meatloaf and saved a 1/4 cup to pour over the top of the meatloaf. It was a real hit.
