  • 3 cups cooked brown rice
  • 1 chopped onion
  • 1 clove garlic, minced
  • "Amazing Dairyless Spread"**(not available where I live)
  • 1/2 cup chopped cabbage
  • 1 tomato cubed
  • 1 carrot, grated
  • 1 tsp. parsley
  • 1tsp. tamari
  • pinch of oregano and basil
  • 1/2 lb. tofu, cubed and sprinkled with 1/3 cup tamari *
  • 1/3 cup tomato sauce or salsa*
  • 3/4 cup grated cheese or parmesan *
  • salt to taste*
  • *my substitutions for the "ADS"
  • **a blend of cashews, sesame seeds, brewers yeast, lemon juice, sea salt, agar, and spices

Directions
  1. Cut the tops off of 7 green peppers. Clean, saving tops. Steam them for 5 minutes. Drain, add filling, and place on a pie pan. A smear of tomato sauce and a bit of grated cheese, lastly garnish with parsley and replace top. Cook at 400 degrees F for 20 minutes 'til tops are lightly browned.
