- 4 lean pork chops - cooked and sliced to bite sized pieces shopping list
- 2 c fresh spinach chopped shopping list
- 1/2 onion chopped shopping list
- 1 clove garlic minced shopping list
- 1 tbsp oil shopping list
- 1/4 c balsamic vinegar shopping list
- jalapeno's to taste (I know you have a jar that's been there for months) shopping list
- 1 can (15oz) black-eyed peas shopping list
- 1 can (15oz) stewed tomatoes - chop the big pieces of tomatoes to a uniform size. shopping list
How to make it
- Heat the oil a good sized skillet on 5.
- Saute the onions and garlic.
- Toss in the pork to heat up
- Add the Jalepenos
- Pour in the black-eyed peas, vinegar and tomatoes.
- Turn the heat down to 3 and let it heat well through - maybe 15 minutes simmering.
