Black-eyed Pig Recipe
This is a "Fridge-check" recipe . I had to figure out what to do with those pesky odds & ends that needed one more go for the gold. I like this over rice.

Ingredients
  • 4 lean pork chops - cooked and sliced to bite sized pieces
  • 2 c fresh spinach chopped
  • 1/2 onion chopped
  • 1 clove garlic minced
  • 1 tbsp oil
  • 1/4 c Balsamic vinegar
  • Jalapeno's to taste (I know you have a jar that's been there for months)
  • 1 can (15oz) black-eyed peas
  • 1 can (15oz) stewed tomatoes - chop the big pieces of tomatoes to a uniform size.

Directions
  1. Heat the oil a good sized skillet on 5.
  2. Saute the onions and garlic.
  3. Toss in the pork to heat up
  4. Add the Jalepenos
  5. Pour in the black-eyed peas, vinegar and tomatoes.
  6. Turn the heat down to 3 and let it heat well through - maybe 15 minutes simmering.
  7. Calories: 261
  8. Fat: 9.72
  9. Carbs: 18.93
  10. Protien: 22.15
  11. Fiber: 4.2

I love "refrigerator stew". This recipe sounds amazing; like southern comfort food. And I love the addition of balsamic vinegar. I'm making this tonight. My ingredients vary slightly, but it's what I have on hand, and I'm excited to put it all together! It was the name that caught me...Thanks so much!
