Roasted Parsnip and Parmesan Soup

- Calling all leftover roasted parsnips... shopping list
- Here's my recipe for roasted parsnip Soup... shopping list
- •Leftover roasted parsnips shopping list
- •50 g freshly grated parmesan cheese shopping list
- •Medium onion finely chopped shopping list
- •1.5 litre vegetable stock shopping list
- •salt and black pepper shopping list
- • Couple table spoons double cream shopping list
How to make it
- Cook the onion gently in a big pan/wok until soft.
- Add the stock, stirring constantly and bring to the boil.
- Add the roasted parsnips and simmer covered for 20 minutes.
- Liquidise the soup with the cheese until smooth.
- Stir in the cream, taste for seasoning and reheat.
- Add some grated cheese to the top. Voila!
