A simple mousse made with cranberries sitting on a rich bed of creamy dark chocolate. How does that sound?

  • Ganache Recipe
  • 1/2 cup of heavy cream
  • 1 cup of semi sweet or 8 oz of your best dark chocolate bar
  • Mousse
  • 1, 12 oz bag of fresh cranberries
  • 2 cups of chilled heavy cream, whipped and mixed with 1 tsp. Vanilla Extract
  • 1/2 cup of sugar
  • 1/4 cup of water
  • 1 tsp fresh lemon or orange zest
  • (Taste your berry mixture. If you want it sweeter, add 1/4 cup of sugar. The chocolate adds sweetness to the complete recipe so taste both together before adding extra sugar please!)

Directions
  1. To make the ganache, simply add the chocolate to the cream in a microwave proof container and cook in microwave on high for 2 minutes.
  2. Stir until well blended and cool to room temperature.
  3. Do not refrigerate!
  4. Mousse
  5. Cook the cranberries with the sugar and water over medium heat until the berries pop. This takes about 10 minutes.
  6. Cook for five minutes after berries pop and remove from heat.
  7. Cool to room temperature.
  8. Crush the berries well using a fork and add the vanilla and zest.
  9. Gently fold in the berries into the whipped cream.
  10. To serve, add several tablespoons of ganache to the bottom of glass and top with the mousse. A dollop of whipped cream is a nice topped with some shaved chocolate. You can get between 4-8 servings of this depending on the glass you serve it in.
  11. *You can add a tablespoon of chocolate or orange liqueur to the mousse for a more adult flavor.
