How to make it

  • To make the ganache, simply add the chocolate to the cream in a microwave proof container and cook in microwave on high for 2 minutes.
  • Stir until well blended and cool to room temperature.
  • Do not refrigerate!
  • Mousse
  • Cook the cranberries with the sugar and water over medium heat until the berries pop. This takes about 10 minutes.
  • Cook for five minutes after berries pop and remove from heat.
  • Cool to room temperature.
  • Crush the berries well using a fork and add the vanilla and zest.
  • Gently fold in the berries into the whipped cream.
  • To serve, add several tablespoons of ganache to the bottom of glass and top with the mousse. A dollop of whipped cream is a nice topped with some shaved chocolate. You can get between 4-8 servings of this depending on the glass you serve it in.
  • *You can add a tablespoon of chocolate or orange liqueur to the mousse for a more adult flavor.
