Pineapple Cheese Torte

This is a recipe from my mother's collection. This is a beautiful torte and so moist and loaded with great flavors. What's not to love about pineapple and cream cheese?
Ingredients
- 1 cup all purpose flour shopping list
- 1-1/4 cups powdered sugar shopping list
- 1/4 cup finely chopped almonds shopping list
- 1/3 cup butter softened shopping list
- Filling: shopping list
- 16 ounces cream cheese softened shopping list
- 1/2 cup granulated sugar shopping list
- 2 eggs shopping list
- 2/3 cup unsweetened pineapple juice shopping list
- Topping: shopping list
- 1/4 cup all purpose flour shopping list
- 1/4 cup granulated sugar shopping list
- 20 ounce can crushed pineapple juice drained and reserved shopping list
- 1/2 cup whipping cream shopping list
- fresh strawberries shopping list
How to make it
- Combine all crust ingredients in a bowl and mix well.
- Pat into the bottom of a rectangular baking pan then bake at 350 for 20 minutes.
- For filling beat cream cheese in a mixing bowl until fluffy then beat in sugar and eggs.
- Stir in juice then pour filling over hot crust and bake at 350 for 20 minutes then cool.
- For topping combine flour and sugar in a saucepan then stir in 1 cup reserved pineapple juice.
- Bring to a boil stirring constantly then boil and stir 1 minute.
- Remove from heat and fold in pineapple then cool.
- Whip cream until stiff peaks form then fold into topping mixture.
- Spread carefully over dessert then refrigerate 6 hours or overnight then garnish with strawberries.
