Buttermilk Panna Cotta

- 1 1/2 tablespoons unflavored gelatin shopping list
- 1 cup whole milk shopping list
- 1/2 cup plus 2 tablespoons granulated sugar shopping list
- 3 cups low-fat buttermilk shopping list
- 1 teaspoon pure vanilla extract shopping list
- cooking spray if you plan to unmold panna cottas shopping list
How to make it
- If planning to unmold spray 8 (6 oz.) custard cups with cooking spray. If you're going to eat straight from the dish there's no need to coat cups.
- In a medium sauce pan pour in the cup of whole milk and sprinkle with the gelatin. Let this mixture stand for 10 minutes.
- Over medium-low heat cook milk/gelatin mixture for 10 minutes or until gelatin has completely dissolved; stirring constantly with a wire whisk.
- Raise heat to medium and add granulated sugar and still stirring with a whisk continue to cook until sugar has dissolved compeletly.
- Remove from heat. Stir in buttermilk and vanilla. Divide evenly among custard cups. Chill for at least 4 hours or until set.
- **Make a nice sauce from some mixed berries (fresh or frozen), a little balsamic vinegar, sugar and a sprinkle of cinnamon. Let fruit marinate in sugar/vinegar until it gives off some of it's liquid. Spoon over panna cotta and serve.**
