Ingredients

How to make it

  • Pre-heat oven to 250 degrees F.
  • Drain the canned tomatoes (saving the juice for another recipe); cut in half lengthwise and seed.
  • Pour 1/2 cup of the olive oil into a large baking dish
  • Arrange the tomatoes in the dish, cut side down. (It's ok if they crowd.)
  • Sprinkle the oregano, salt and sugar over the tomatoes. Follow with the remaining 1/2 cup of olive oil and the red wine.
  • Put in the oven for an hour.
  • Remove from oven and flip tomatoes with tongs so they are cut-side up. Put back in the oven for another hour.
  • Remove from oven again. Enjoy the amazing delicious scent that fills up your kitchen! Flip the tomatoes one more time, so they are cut-side down again. Put back in the oven for 20 more minutes.
  • Remove from oven. Layer tomatoes in a bowl, with minced raw garlic between each layer for garnish/flavor.
  • Let sit for an hour before serving. Serve with thick slices of hearty, crusty bread; goat cheese is good with this, too.
