Roasted Tomatoes

- 2 28oz cans whole tomatoes packed in juice (San Marzano and Progresso are good) shopping list
- 1 cup good-quality extra-virgin olive oil shopping list
- 1 1/2 tsp dried oregano shopping list
- 1 scant tsp sugar shopping list
- 1 scant tsp salt shopping list
- 1/2 cup dry red wine shopping list
- Raw garlic for garnish shopping list
How to make it
- Pre-heat oven to 250 degrees F.
- Drain the canned tomatoes (saving the juice for another recipe); cut in half lengthwise and seed.
- Pour 1/2 cup of the olive oil into a large baking dish
- Arrange the tomatoes in the dish, cut side down. (It's ok if they crowd.)
- Sprinkle the oregano, salt and sugar over the tomatoes. Follow with the remaining 1/2 cup of olive oil and the red wine.
- Put in the oven for an hour.
- Remove from oven and flip tomatoes with tongs so they are cut-side up. Put back in the oven for another hour.
- Remove from oven again. Enjoy the amazing delicious scent that fills up your kitchen! Flip the tomatoes one more time, so they are cut-side down again. Put back in the oven for 20 more minutes.
- Remove from oven. Layer tomatoes in a bowl, with minced raw garlic between each layer for garnish/flavor.
- Let sit for an hour before serving. Serve with thick slices of hearty, crusty bread; goat cheese is good with this, too.
