What I love about this recipe is, it uses canned tomatoes but the result is totally late-summer, fresh-tomato-y. It makes your kitchen smell like heaven!

Ingredients
  • 2 28oz cans whole tomatoes packed in juice (San Marzano and Progresso are good)
  • 1 cup good-quality extra-virgin olive oil
  • 1 1/2 tsp dried oregano
  • 1 scant tsp sugar
  • 1 scant tsp salt
  • 1/2 cup dry red wine
  • Raw garlic for garnish

Directions
  1. Pre-heat oven to 250 degrees F.
  2. Drain the canned tomatoes (saving the juice for another recipe); cut in half lengthwise and seed.
  3. Pour 1/2 cup of the olive oil into a large baking dish
  4. Arrange the tomatoes in the dish, cut side down. (It's ok if they crowd.)
  5. Sprinkle the oregano, salt and sugar over the tomatoes. Follow with the remaining 1/2 cup of olive oil and the red wine.
  6. Put in the oven for an hour.
  7. Remove from oven and flip tomatoes with tongs so they are cut-side up. Put back in the oven for another hour.
  8. Remove from oven again. Enjoy the amazing delicious scent that fills up your kitchen! Flip the tomatoes one more time, so they are cut-side down again. Put back in the oven for 20 more minutes.
  9. Remove from oven. Layer tomatoes in a bowl, with minced raw garlic between each layer for garnish/flavor.
  10. Let sit for an hour before serving. Serve with thick slices of hearty, crusty bread; goat cheese is good with this, too.
