Ingredients
  • 1 1/2 pounds country-style spare ribs
  • Oil, enough to brown ribs
  • 4 cups water
  • 1/2 cup carrots, 1/2" dice
  • 2 cups onion, chopped
  • 1 clove garlic, minced
  • 3 bay leaves
  • 1 teaspoon dried oregano
  • 1 pound can of crushed tomatoes OR tomato puree
  • 1 jajapeno pepper, finely minced
  • 2 teaspoons salt
  • 1 pound dry kidney beans OR dried bean of your choice
  • 1 bunch fresh parsley

Directions
  1. Heat oil.
  2. Brown ribs well on all sides over medium heat.
  3. This will take about 30 minutes.
  4. Add all remaining ingredients except parsley.
  5. Bring to a boil.
  6. Reduce heat to low.
  7. Cover.
  8. Simmer for approximately 2 hours OR until beans are tender.
  9. Stir in parsley (or cilantro, if you choose).
  10. Stir and serve.
