Jacques Pork and Beans

- 1 1/2 pounds country-style spare ribs shopping list
- oil, enough to brown ribs shopping list
- 4 cups water shopping list
- 1/2 cup carrots, 1/2" dice shopping list
- 2 cups onion, chopped shopping list
- 1 clove garlic, minced shopping list
- 3 bay leaves shopping list
- 1 teaspoon dried oregano shopping list
- 1 pound can of crushed tomatoes OR tomato puree shopping list
- 1 jajapeno pepper, finely minced shopping list
- 2 teaspoons salt shopping list
- 1 pound dry kidney beans OR dried bean of your choice shopping list
- 1 bunch fresh parsley shopping list
How to make it
- Heat oil.
- Brown ribs well on all sides over medium heat.
- This will take about 30 minutes.
- Add all remaining ingredients except parsley.
- Bring to a boil.
- Reduce heat to low.
- Cover.
- Simmer for approximately 2 hours OR until beans are tender.
- Stir in parsley (or cilantro, if you choose).
- Stir and serve.
