  • 2/3 cup chunky peanut butter
  • 1 1/2 cups coconut milk
  • 2 tablespoons soy sauce
  • 1/4 cup lemon juice
  • 2 teaspoons brown sugar, your choice
  • 4 cloves garlic, pressed
  • Salt to taste
  • Cayenne pepper to taste
  • 1/4 cup chicken stock
  • 1/4 cup whipping cream
  • 1 pound linguini
  • 2 tablespoons peanut oil
  • 6 scallions, chopped
  • 6 boneless chicken breasts, poached in white white for about 35 minutes
  • 1 pound snow peas, julienned, blanched and cooled in ice water.
  • Chopped, unsalted dry roast peanuts (garnish)
  • Toasted sesame seeds (garnish)
  • Coriander sprigs (garnish)
  • SAUCE:
  • 1/3 cup Coco Lopez
  • 1/2 to 3/4 cup hot water

Directions
  1. Poach chicken breasts in enough white wine to cover for 35 minutes.
  2. Set aside on platter.
  3. Combine peanut butter, coconut milk, soy sauce, lemon juice, brown sugar, garlic, salt and cayenne pepper in Dutch oven over low heat.
  4. Stir constantly until smooth.
  5. Puree in food processor or blender.
  6. Add chicken stock and whipping cream.
  7. Blend until smooth.
  8. Pour into bowl, cover and refrigerate.
  9. Cook pasta.
  10. Cool under running water.
  11. Place pasta in a bowl.
  12. Toss with peanut oil.
  13. Allow to cool, stirring occasionally to avoid pooling of the oil.
  14. To serve, place pasta on plate, as a nest.
  15. Spoon peanut sauce onto pasta.
  16. Sprinkle with scallions.
  17. Top the pasta with chicken breast.
  18. Surround pasta with snow peas (I use regular peas).
  19. Sprinkle dish with peanuts, sesame seeds and coriander sprig.
  20. Serve with coconut sauce on the side.
  21. SERVE AT ROOM TEMPERATURE.
