This is pretty darned delectable if I must say so myself. Akin to a pineapple upside-down cake but the pear and gingerbread put this in a class by itself!

Ingredients
  • 1/2 stick butter, in pats
  • 3/4 cup light brown sugar
  • 2 pears, sliced (can use canned)
  • 1 14 ounce box gingerbread mix

Directions
  1. Put butter in an 8" round cake pan OR a cast iron skillet.
  2. Prepare boxed gingerbread according to package directions.
  3. Set aside.
  4. Place pan in oven to melt butter while oven is preheating to 350 degrees F.
  5. Remove pan from heat when butter has melted.
  6. Sprinkle brown sugar evenly in pan.
  7. Arrange pears atop the sugar in the pan, filling pan as much as possible.
  8. Pour prepared gingerbread mix onto pears.
  9. Bake for 50 to 60 minutes OR until gingerbread tests done.
  10. Remove from oven.
  11. Cool five minutes on a rack.
  12. Invert cake onto plate.
  13. Garnish with whipped cream dollops.

Alterations


Hello Lorraine,

I have some Trader Joe's Gingerbread Mix in my pantry along with some crushed pineapple that goes into the original "Upside Down Cake" we know and love. This combo Gingerbread and Pineapple I think would work...but make it like an upside down cake. There are all sorts of variations for this one. My folks would love it. My dad loves gingerbread so I think that would put a smile on his face. My mom loves anything!
