Peanut Butter Snowballs

This comes from the Gooseberry Patch Catalog. A new twist on peanut butter cookies - with white chocolate! Prep time does NOT include chilling.
Ingredients
- 2 cups creamy peanut butter shopping list
- 2 tablespoons butter, softened shopping list
- 2 cups powdered sugar shopping list
- 2 cups crispy rice cereal shopping list
- 16-ounce package white melting chocolate, chopped shopping list
How to make it
- Blend peanut butter, butter and powdered sugar.
- Add cereal and mix well.
- Shape into balls by teaspoonsful.
- Set balls on waxed paper.
- Freeze for several hours, up to overnight. (I prefer to simply refrigerate overnight and not to freeze at all.)
- Melt chocolate in a double boiler over medium-low heat; stir until smooth.
- Dip balls into melted chocolate, return to waxed paper until set.
- Recipe makes 4 to 5 dozen snowballs.
