Ingredients
  • 1lb. medium shrimp (cleaned and shells off)
  • 2- green onions(diced)
  • 2-cloves garlic(minced)
  • 2-carrots(cut thinly on angle)
  • 10-snow peas (cut in half ends removed)
  • handful bean sprouts( i add at the end i like them to stay kind of crunchy)
  • 1- can sliced water chestnuts(drained)
  • 1-can baby corn(cut bite size)
  • 1 -can coconut milk
  • 1-pkt thai peanut sauce(come with 2 packets use both)
  • 1/2 -cup cilantro
  • 1- lime(cut into 4 (wedges)
  • unsalted peanuts(roasted)

Directions
  1. In sauce pan open coconut milk and 2 peanut sauce packets and bring to a boil and simmer for about 4-6 minutes
  2. in stir fry pan,1 tblspoon canola oil heat pan med high
  3. add carrotsand onion.snow peas,cook for about 3-4 minutes then add baby corn,garlic,waterchestnuts, and shrimp cook just til shrimp turn pink then add bean sprouts,then poor cocnut peanut sauce mixture over shrimp and veggies
  4. serve the shrimp and veggies over a plate jasmine rice and top with cilantro and unsalted peanuts and a wedge of lime on the side(sqeeze all over dish)
