Cali Girls Shrimp Thai Over Jasmine Rice

- 1lb. medium shrimp (cleaned and shells off) shopping list
- 2- green onions(diced) shopping list
- 2-cloves garlic(minced) shopping list
- 2-carrots(cut thinly on angle) shopping list
- 10-snow peas (cut in half ends removed) shopping list
- handful bean sprouts( i add at the end i like them to stay kind of crunchy) shopping list
- 1- can sliced water chestnuts(drained) shopping list
- 1-can baby corn(cut bite size) shopping list
- 1 -can coconut milk shopping list
- 1-pkt thai peanut sauce(come with 2 packets use both) shopping list
- 1/2 -cup cilantro shopping list
- 1- lime(cut into 4 (wedges) shopping list
- unsalted peanuts(roasted) shopping list
How to make it
- In sauce pan open coconut milk and 2 peanut sauce packets and bring to a boil and simmer for about 4-6 minutes
- in stir fry pan,1 tblspoon canola oil heat pan med high
- add carrotsand onion.snow peas,cook for about 3-4 minutes then add baby corn,garlic,waterchestnuts, and shrimp cook just til shrimp turn pink then add bean sprouts,then poor cocnut peanut sauce mixture over shrimp and veggies
- serve the shrimp and veggies over a plate jasmine rice and top with cilantro and unsalted peanuts and a wedge of lime on the side(sqeeze all over dish)
