Warm Curried Salad Recipe
An easy fall-winter lunch for when you need something warming and light at the same time.

Ingredients
  • 1 1/2 tbsp Patak's Tandoori Paste
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp water
  • 150 g eggplant, unpeeled and chopped
  • 55 g sliced mushrooms
  • 55 g sliced zucchini

Directions
  1. Pre-heat oven to 375ºF.
  2. Combine paste, garlic and onion powders, and water, set aside.
  3. Combine vegetables in a small roasting pan, cook 20-30 minutes.
  4. Toss with thinned paste mixture.
  5. Serve over a bed of lettuce (or pasta for a heartier meal).
