No mess simple and great with a deliciously different hot salad to complement this oven baked cod.

Ingredients
  • 2 slices bread ,crust removed
  • 1 small bunch parsley
  • 55g /2oz grated parmesan
  • 15g /1/2 oz butter,melted
  • 4x175g/6oz cod fillet
  • For the hot salad
  • 4 plum tomatoes cut into quarters
  • 1/2 redonion,finely sliced
  • 2 garlic cloves,finelysliced
  • 225g/8oz sundried tomatoes in oil
  • 4 tbs olive oil
  • 3 sprigs fresh thyme,fresh basil to garnish

Directions
  1. Preaheat the oven to 200 c /gas6
  2. Blend the bread in a processor to form crumbs
  3. Stir in parsley,parmesan,melted butter and season well.
  4. Season cod fillet,spread the crumbs mixture on top.
  5. use a thick coating of crumbs ,so when it's cooked the cod will have a delicious crunchy crust.
  6. Bake cod for 8-10minutes,until cooked through.
  7. for the hot salad:
  8. Put all ingredient,except basil into a pan
  9. Place on a high heat and bring to boil
  10. Turn off the heat immediatly. it should be hot but still crisp so don't over cook it
  11. Serve the hot salad on to each plate
  12. Put a cod on top and garnish with fresh basil
