Oven Backed Cod With A Cheese And Herb Crust

- 2 slices bread ,crust removed shopping list
- 1 small bunch parsley shopping list
- 55g /2oz grated parmesan shopping list
- 15g /1/2 oz butter,melted shopping list
- 4x175g/6oz cod fillet shopping list
- For the hot salad shopping list
- 4 plum tomatoes cut into quarters shopping list
- 1/2 redonion,finely sliced shopping list
- 2 garlic cloves,finelysliced shopping list
- 225g/8oz sundried tomatoes in oil shopping list
- 4 tbs olive oil shopping list
- 3 sprigs fresh thyme,fresh basil to garnish shopping list
How to make it
- Preaheat the oven to 200 c /gas6
- Blend the bread in a processor to form crumbs
- Stir in parsley,parmesan,melted butter and season well.
- Season cod fillet,spread the crumbs mixture on top.
- use a thick coating of crumbs ,so when it's cooked the cod will have a delicious crunchy crust.
- Bake cod for 8-10minutes,until cooked through.
- for the hot salad:
- Put all ingredient,except basil into a pan
- Place on a high heat and bring to boil
- Turn off the heat immediatly. it should be hot but still crisp so don't over cook it
- Serve the hot salad on to each plate
- Put a cod on top and garnish with fresh basil
