Chicken And Saffron Rice Recipe
This is a recipe from the Marvel Estate that I purchased in Dallas, Texas in 1991. Enjoy

Ingredients
  • 1/4 cup olive oil
  • 2 yellow onions diced
  • 1 green pepper diced
  • 2 cloves garlic minced
  • 2 bay leaves
  • 1/8 teaspoon oregano
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tomato diced
  • 2 cups water
  • 1 cup rice
  • 5 strands saffron
  • Peas and pimentos for garnish
  • 4 pieces chicken

Directions
  1. Preheat oven to 375 then heat oil in a large skillet.
  2. Add next ingredients then sauté until tender.
  3. Saute 4 pieces chicken until just firm then add water and bring to a boil.
  4. Add rice and saffron and bring to a boil again.
  5. Stir then cover and bake 20 minutes then garnish with peas and pimentos.
