Never enough lemon flavor for me, I must admit! This tart fulfills my requirements to a tee.

Ingredients
  • CRUST:
  • 1 cup flour
  • 1/4 teaspoon salt
  • 7 tablespoons unsalted butter
  • FILLING:
  • 6 large lemons (for zest AND juice)
  • 3 large eggs
  • 3/4 cup sugar
  • 1/4 cup heavy cream

Directions
  1. Preheat oven to 400 degrees F.
  2. Combine dough ingredients until proper consistency for kneading.
  3. Knead lightly.
  4. Lay crust gently into a 10" diameter tart pan with removable bottom.
  5. Prick crust all over with fork.
  6. Line crust with foil.
  7. Pour beans onto foil.
  8. Bake for 20 minutes.
  9. Remove from oven.
  10. Remove foil from crust.
  11. Bake another 5 to 10 minutes OR until crust is browned.
  12. Reduce oven temperature to 350 degrees F.
  13. Grate lemons for zest.
  14. Squeeze 1/2 cup juice from lemons.
  15. Whisk together the lemon zest, lemon juice, eggs and sugar.
  16. Whisk in the cream.
  17. Pour mixture into warm tart shell.
  18. Bake for 23 to 25 minutes.
  19. Remove from oven.
  20. Cool completely.
  21. Top with berries, chocolate shaving, whipped cream........
