Tomato Risotto

- 1 tablespoon good olive oil shopping list
- 1 cup arborio rice shopping list
- 2 cups chicken stock shopping list
- 1 1/4 cups tomato puree shopping list
- salt, if desired shopping list
How to make it
- Heat the oil in sauce pan.
- Add arborio rice and stir to coat rice.
- Combine the chicken stock and tomato puree in a pot.
- Bring just to a boil.
- Add stock mixture to rice in pan.
- Simmer rice, stirring frequently until liquid is absorbed and rice is tender.
- **You may choose to add a pinch of dried herbs (oregano, basil, etc.) to this dish while it simmers.
