Ingredients
  • 1/1/2 pounds fresh asparagus spears, halved.
  • 4 boneless, skinless chicken breast halves
  • 2 TBS. cooking oil (to cut down fat spray pan with pam).
  • 1/2 tsp. salt
  • 1/4 tsp. pepper.
  • 1 can (10-3/4 oz.) condensed cream of chicken soup, undiluted.
  • 1/2 cup mayonnaise
  • 1 tsp. lemon juice.
  • 1/2 tsp. curry powder.
  • 1 cup (4 oz.) shredded chedar cheese.

Directions
  1. Preheat oven to 375
  2. If desired, partially cook asparagus; drain.
  3. Place the asparagus in a greased 9-inch square baking dish.
  4. In a skillet over medium heat, brown the chicken in oil on both sides.
  5. Season with salt and pepper.
  6. Arrange chicken over asparagus.
  7. In a bowl mix soup. mayonnaise, lemon juice and curry powder.
  8. Pour over chicken. Cover and bake at 375 for 40 minutes or until the chicken is tender and the juices run clear.
  9. Srinkle with cheese. Let stand 5 minutes before serving.
  10. Can be served with potatoes, noodles, or rice.
