Nice one.. good with fruit syrups as well as maple syrup. Great cooked in a cast iron skillet!

Ingredients
  • 1 cup pancake mix
  • 2/3 cup milk
  • 2 tablespoons vegetable oil
  • 1 large egg, beaten
  • 1/4 cup butter
  • 1/3 cup packed light brown sugar
  • 1 medium Golden Delicious apple, peeled, cored and sliced
  • Maple syrup

Directions
  1. Combine pancake mix, milk, oil and egg in a bowl.
  2. Preheat oven to 350 degrees F.
  3. Melt butter in an 8" ovenproof skillet.
  4. Stir in brown sugar and apple slices.
  5. Saute until sugar dissolves.
  6. Pour batter over apple mixture in skillet.
  7. Cook, uncovered, over medium heat until bubbles form on top of pancake.
  8. Bake for 12 to 17 minutes OR until golden.
  9. Invert pancake onto serving platter.
  10. Serve with syrup.
