Ingredients

How to make it

  • Heat a frying pan over medium high heat until hot. Add oil.
  • Add onions and garlic to pan and saute until tender.
  • Salt the chicken and add to pan and brown on both sides.
  • Add the curry powder and stir until fragrant.
  • Add the tomatoes and the coconut milk.
  • Bring to boil, then lower heat and simmer covered for 30 minutes.
  • Remove lid and chicken from pan. Bring sauce to boil and let reduce to thicken.
  • Add chicken back to pan to reheat. Serve.
