Chicken Coconut Curry

- 4 chicken thighs, with or without skin shopping list
- 1 tsp curry powder shopping list
- 1 Tbsp oil or clarified butter shopping list
- 1 large onion, sliced in half moons shopping list
- 2 cloves of garlic, thinly sliced shopping list
- 2/3 cup coconut milk shopping list
- 1 16 oz can pureed tomatoes shopping list
- salt to taste shopping list
How to make it
- Heat a frying pan over medium high heat until hot. Add oil.
- Add onions and garlic to pan and saute until tender.
- Salt the chicken and add to pan and brown on both sides.
- Add the curry powder and stir until fragrant.
- Add the tomatoes and the coconut milk.
- Bring to boil, then lower heat and simmer covered for 30 minutes.
- Remove lid and chicken from pan. Bring sauce to boil and let reduce to thicken.
- Add chicken back to pan to reheat. Serve.
