Chicken Coconut Curry Recipe
I love curry dishes, but am too lazy to make my own curry mixtures most of the time. I was trying to come up with a different flavor. I hope you like this. Serve it with basmati rice and a raita. If you like, add some cayenne pepper

Ingredients
  • 4 chicken thighs, with or without skin
  • 1 tsp curry powder
  • 1 Tbsp oil or clarified butter
  • 1 large onion, sliced in half moons
  • 2 cloves of garlic, thinly sliced
  • 2/3 cup coconut milk
  • 1 16 oz can pureed tomatoes
  • salt to taste

Directions
  1. Heat a frying pan over medium high heat until hot. Add oil.
  2. Add onions and garlic to pan and saute until tender.
  3. Salt the chicken and add to pan and brown on both sides.
  4. Add the curry powder and stir until fragrant.
  5. Add the tomatoes and the coconut milk.
  6. Bring to boil, then lower heat and simmer covered for 30 minutes.
  7. Remove lid and chicken from pan. Bring sauce to boil and let reduce to thicken.
  8. Add chicken back to pan to reheat. Serve.
