This dish puts a spicy spin on the old chicken favorite. Goes perfectly with healthy vegetables yet delicious!

Ingredients
  • 4 boneless skinless chicken breasts
  • 2 bell peppers (red, yellow, or green.)
  • 2 medium roma tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 8 tsp. olive oil
  • 3 tsp. salt
  • 2 tsp. black pepper
  • 1/8 cup fresh cilantro
  • 1 tsp. lime juice
  • 4 skewers
  • 1 medium pan

Directions
  1. Soak your skewers aside with water (you could make a stir fry if you don't have any.)
  2. cut chicken into 1 1/2 inch cubes
  3. cut tomatoes, onion, peppers, and garlic (make them suitable for your skewers)
  4. add 4 tsp. olive oil, 2 tsp. salt, and 1 tsp. to vegetables
  5. add remaining salt and pepper to chicken
  6. put then into skewers ( chicken then tomato then chicken then pepper then chicken then onion)
  7. put pan into medium high heat and add remaining olive oil
  8. when oil is hot add garlic for 10 seconds then skewers
  9. when chicken is is fully cooked and vegetables are carmelized take them out
  10. add lime juice and cilantro right before serving

Everytime we grill I can never remember to soak the skewers in water before-hand.... Hence the reason we don't have k-bobs! I will save this for later. Yum - high 5
