Artichoke and Corn Salsa

- 1 ear of corn cooked shopping list
- 6 freshly cooked medium artichokes with hearts diced and leaves separated and left whole shopping list
- 1/2 cup diced roasted red bell pepper shopping list
- 1 small red onion diced shopping list
- 1/2 cup peeled diced jicama shopping list
- 3 serrano chilies seeded and minced shopping list
- 1/2 bunch fresh cilantro finely chopped shopping list
- 3 limes juiced shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- When ear of corn has cooled slice off kernels.
- Combine corn with hearts, pepper, onion, jicama, chilies, cilantro, juice, salt and pepper.
- Chill to blend flavors then place salsa in serving bowl.
- Fan artichoke leaves around bowl to use for dipping.
