SAUTÉED CHICKEN BREAST WITH APPLE CURRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Peyton Estate in Waxahachie, Texas in 1984.

Ingredients
  • 1 teaspoon unsalted butter
  • 2 shallots chopped
  • 2 cloves garlic chopped
  • 2 teaspoons chopped fresh ginger
  • 1 tart apple peeled and diced
  • 1/2 cup dry white wine
  • 1/2 cup apple cider
  • 1 tablespoon curry powder
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 boneless chicken half breasts
  • 1 tablespoon olive oil
  • Slices of red apple for garnish
  • Chopped green onions for garnish

Directions
  1. Preheat oven to 350.
  2. In large sauté pan over medium heat melt butter until very hot.
  3. Sauté shallots, garlic and ginger 2 minutes then add diced apple and toss to coat with butter.
  4. Add wine and cider then cook 4 minutes.
  5. In small sauté pan over high heat dry sauté the curry powder for 3 minutes.
  6. Add it and the cream to the apples and cook until sauce thickens about 5 minutes.
  7. Season with salt and pepper then set sauce aside and keep it warm.
  8. Season chicken with salt and pepper then heat olive oil in large sauté pan until smoking hot.
  9. Place chicken breast halves skin side down in pan and cook 4 minutes.
  10. Turn chicken over and place sauté pan in oven and bake 45 minutes .
  11. Place chicken breasts on a serving platter and pour the apple curry sauce over all.
  12. Garnish with slices of red apple and a sprinkling of chopped green onions and serve.
