Chicken Breasts Stuffed With Spinach Blue Cheese And Bacon Recipe

From Judy at Allrecipes.. anything stuffed with blue cheese, bacon and spinach can't be all bad now could it? Mmmmmm!

Ingredients
  • 8 slices bacon, cooked until crisp and drained
  • 4 skinless, boneless chicken breasts, pounded to 1/2" thickness
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1 cup blue cheese, crumbled
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil

Directions
  1. Preheat oven to 350 degrees F.
  2. Stir toether spinach and blue cheese in medium bowl.
  3. Crumble in bacon and stir to distribute.
  4. Lay chicken breast halves out on a clean surface.
  5. Distribute spinach mixture evenly onto centers of breasts.
  6. Fold chicken over stuffing.
  7. Secure with toothpicks.
  8. Combine flour, salt and pepper on plate.
  9. Roll breasts in flour to coat.
  10. Heat oil in skillet over medium-high heat.
  11. Quickly brown breasts on both sides.
  12. Remove chicken to lightly greased baking dish.
  13. Cover with aluminum foil.
  14. Bake for 30 minutes.
