Mashed Sweet Potatoes Recipe

How to make it

  • Microwave sweet potatoes according to package (12 minutes)
  • Mix all ingredients together using an electric mixer
  • Pour into a 2 qt. casserole dish
  • Top with marshmallows
  • Broil in oven until marshmallows are browned and melted, 2-3 minutes

    Fresh are the best, of course, but these are perfect for a quick fix. And believe it or not, they are good!

    Add some pineapple, coconuts or nuts. I made this for Thanksgiving and added about 1/4 cup of chopped pecans. Everyone loved it.
