Ingredients
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon each baking powder, baking soda, salt, ground cinnamon and nutmeg
  • 4 eggs, lightly beaten
  • 1-1/3 cups vegetable oil
  • 1-1/2 teaspoons vanilla extract
  • 1 can (8 ounces) crushed pineapple, undrained
  • 2 cups mashed ripe bananas (3 to 4 medium)
  • 1-1/2 cups chopped walnuts
  • Confectioners' sugar

Directions
  1. In a mixing bowl, combine dry ingredients.
  2. Beat in eggs, oil and vanilla.
  3. Fold in pineapple, bananas and nuts.
  4. Pour in to a well-greased 10-in. tube pan.
  5. Bake at 350 degrees for 60-65 minutes or until cake tests done.
  6. Cool in pan 15 minutes before removing to a wire rack.
  7. When completely cooled, dust with confectioners' sugar.
  8. Yield: 12-16 servings.
