Ingredients
  • 3 large eggplants
  • 400 g of mince beef
  • salt
  • garlic
  • olive oil
  • white wine
  • black pepper
  • half an onion
  • extra virgin olive oil

Directions
  1. Cut three eggplants in half, then scoop out most of the flesh and put it aside. You will be left with six shells'.
  2. Drizzle some extra virgin olive oil in them and add a pinch of salt .
  3. Chop the eggplant's flesh as finely as possible, then mix it with the minced beef.
  4. Fry half a finely chopped onion in extra virgin olive oil until translucent.
  5. Add the eggplant and beef mixture.
  6. Brown the beef, add salt, then a little white wine and let it reduce.
  7. Fill the eggplant shells with all these mixed ingredients.
  8. Bake for about 30 minutes at moderate heat (180 C).
