Lager Mushroom Barley Salad

- 3 cups cooked pearl barley cooked in beef stock shopping list
- 3 tablespoons olive oil shopping list
- 1 tablespoon minced garlic shopping list
- 3 cups mixed organic mushrooms shopping list
- 1/2 cup diced red bell pepper shopping list
- 1/2 cup diced celery shopping list
- 1/4 cup red onion finely diced shopping list
- 1 cup scallion dressing shopping list
- 1/2 cup mild lager shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- scallion Dressing: shopping list
- 6 ounces dark sesame oil shopping list
- 2 cups vegetable oil shopping list
- 1 cup rice wine vinegar shopping list
- 12 ounces porter beer shopping list
- 1/3 cup soy sauce shopping list
- 4 ounces Chinese bead molasses shopping list
- 6 cloves minced garlic shopping list
- 12 scallions sliced thin shopping list
- 1/4 teaspoon Tabasco sauce shopping list
How to make it
- Over medium high heat in large skillet add 3 tablespoons olive oil.
- Stir in mushrooms until they wilt.
- Add garlic and toss until aromatic then deglaze pan with lager.
- Let mushrooms sweat for 10 minutes then cool to room temperature.
- Toss bell pepper, onion and celery with the cooked mushrooms then add dressing.
- Toss well and serve over greens.
- To make dressing combine all ingredients and mix well.
