German Sauerkraut Salad Recipe
This is my fav salad its really good.

Ingredients
  • 2 cups sauerkraut (1 lb. can)
  • 1/2 c. sugar
  • 1/2 c. thinly sliced celery
  • 1/2 c. thin strips green pepper
  • 1/2 c. shredded carrot
  • 1/4 c. chopped onion

Directions
  1. Cut sauerkraut strands in shorter pieces if required. Stir in sugar and let stand 1/2 hour. Add remaining ingredients. Cover bowl tightly and chill in refrigerator at least 12 hours before serving.
  2. Makes 8 servings (1/2 cup each).

I do so love sauerkraut! Thanks for the recipe. This seems as thought it would be good warmed as well, any thoughts? One of the reasons I love winter is that I can try so many hot/warm dishes!

Alterations


I've made a salad like this for years. We have it every New Years Day except........... We always make it the night before. It gets better the longer it sits. I'm not sure I'd like it without the vinegar and oil. But I know the other way it's delicious so I may try it sometime.
New Years Salad
Mix and set aside:
1 1/2 c. granulated sugar
1/4 c. salad oil
1/2 c. vinegar
Then, stir together:
1 lg. can sauerkraut, drained
1 c. chopped celery
1/2 c. chopped green onions
1 c. chopped red pepper
Pour sugar mixture over and mix well. Refrigerate at least overnight.
