How to make it

  • Remove the bruised leaves from the fresh brussels sprouts...if any.
  • Cut an "X" in the stem-end of each sprout.
  • Wash in salty warm water.
  • Bring the chicken broth to a boiling in large saucepan.
  • Add the fresh sprouts,salt(pinch),pepper and mace.
  • Bring to boiling,lower the heat to simmer.
  • Stir in the chestnuts and cover pan.
  • Cook for about 15 minutes or until crisp tender.
  • Remove with slotted spoon to a heated bowl,(save cooking liquid for soup making).
  • Add butter to brussels sprouts and chestnuts, toss gently.
