How to make it

  • Set oven to 180C/gas mark 5
  • Place all the ingredients in a bowl
  • Use the electric mixer to cream the mixture. Beat fro 1 minute at the lowest setting and then turn to the highest setting and beat for 3 minutes until the mixture is soft and creamy
  • Divide the mixture evenly into 8 paper cases
  • Bake in the centre of the oven for 15 minutes when the cakes should be well risen and if gently pressed with the fingertips should spring back into shape
  • Remove them ffrom the patty tin and place them on a cooling tray
  • Melt 25g margarine in a small pot, add cocoa and cook very gently for 1 minute. Remove from heat and add 25ml evaporated milk and 50g sieved icing sugar. Spread over cakes and leave to set!
