This filling or stuffing can be used with any pasta, from manicotti to eggplant rolatini. It is simple and so delicious!

Ingredients
  • 16 ounces ricotta cheese
  • 1/4 cup fresh OR dried parsley
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • **You can substitute broccoli pieces OR chopped spinach and make spinach stuffed shells OR broccoli stuffed shells.

Directions
  1. Combine all ingredients well in a small bowl.
  2. Stuff pasta with mixture.
