Minestrone

- 1/4 pound bacon, diced shopping list
- 1/4 pound sausage, chopped shopping list
- 2 medium onions, chopped shopping list
- large can tomato puree shopping list
- 1/2 cup long grain white rice shopping list
- 1 pound beans, soaked overnight (your choice) shopping list
- 1/4 cup celery, chopped shopping list
- 6 cups beef stock shopping list
- 1/4 medium head cabbage shopping list
- 1 pound vegetables of your choice (Ed uses frozen "vegetables for Soup) shopping list
- salt and pepper to taste shopping list
How to make it
- Saute bacon, sausage and onion together in small amount of olive oil until browned.
- Add tomato puree, rice, beans, celery and stock.
- Bring to a boil.
- Reduce heat.
- Simmer until beans are tender.
- Add vegetables and cabbage.
- Simmer until vegetables are cooked through.
