This Ed's favorite soup to play with! We have made this for crowds and made it for just the two of us. The longer it sits, the better it tastes!

Ingredients
  • 1/4 pound bacon, diced
  • 1/4 pound sausage, chopped
  • 2 medium onions, chopped
  • large can tomato puree
  • 1/2 cup long grain white rice
  • 1 pound beans, soaked overnight (your choice)
  • 1/4 cup celery, chopped
  • 6 cups beef stock
  • 1/4 medium head cabbage
  • 1 pound vegetables of your choice (Ed uses frozen "Vegetables for Soup)
  • Salt and pepper to taste

Directions
  1. Saute bacon, sausage and onion together in small amount of olive oil until browned.
  2. Add tomato puree, rice, beans, celery and stock.
  3. Bring to a boil.
  4. Reduce heat.
  5. Simmer until beans are tender.
  6. Add vegetables and cabbage.
  7. Simmer until vegetables are cooked through.
