Corn And Ripe Olive Salsa

- 11 ounces corn kernels, preferably yellow corn shopping list
- 2 medium roma tomatoes, seeded and chopped shopping list
- 6 scallions, chopped shopping list
- 1 clove garlic, minced shopping list
- 2 tablespoons lemon juice shopping list
- 1 tablespoon cilantro, chopped shopping list
- 1 jalapeno pepper, chopped and seeded OR not shopping list
- 2 tablespoons parsley, chopped shopping list
- 1/2 large can ripe olives, chopped shopping list
How to make it
- Combine all ingredients in a bowl.
- Cover.
- Refrigerate.
- Allow to sit at least overnight to allow the flavors to meld.
- **The longer it sits, the better it tastes.
