Roasted Pepper and Black Bean Salsa

- corn kernels from four ears shopping list
- 3 roma tomatoes, seeded and chopped shopping list
- 6 scallions, chopped shopping list
- 2 tablespoons lemon juice shopping list
- 1 tablespoon cilantro, chopped shopping list
- 8 ounces canned black beans, rinsed and drained shopping list
- 1 clove garlic, minced shopping list
- 3 large roasted peppers, chopped shopping list
- 1 jalapeno pepper, chopped and seeded OR not shopping list
- 2 tablsepoons parsley, chopped shopping list
- 15 ounce can tomato sauce shopping list
How to make it
- Combine all ingredients in a bowl.
- Cover bowl with plastic wrap.
- Refrigerate.
- Allow to sit at least overnight to allow flavors to meld.
- **The longer it sits, the better the taste.
