Eggplant Penne

- 4 1/2 cps cubed eggplant shopping list
- 3 tbls olive oil, divided shopping list
- 1 1/2 cps finely chopped onion shopping list
- 3/4 tsp salt, divided shopping list
- 2 garlic cloves, minced shopping list
- 1 cp cooking wine or stock of your choice shopping list
- 1 (28oz) can tomatoes undrained and chopped shopping list
- 1 tbls basil shopping list
- 1 tbls parsley shopping list
- 2 tsp thyme shopping list
- 1/4 tsp black pepper shopping list
- 5 cps cooked penne pasta ( about 10 oz uncooked) shopping list
How to make it
- Place egglant in a large bowl, drizzle with 2 tbls olive oil, tossing to coat. Arrange eggplant in a single layer on baking sheet, bake for 15 mins, stirring once.
- Heat the remaining 1 tbls oil in a large nonstick skillet over med-hi heat. Add onion and saute for 5 mins. Add 1/2 tsp salt and garlic. Saute another minute. Stir in wine or broth and tomatoes, bring to a boil. Reduce heat to med and cook 20 mins, stirring occasionally. Stir in eggplant, basil, parsley, thyme, salt and pepper to taste. Serve over hot cooked pasta.
