How to make it

  • Place egglant in a large bowl, drizzle with 2 tbls olive oil, tossing to coat. Arrange eggplant in a single layer on baking sheet, bake for 15 mins, stirring once.
  • Heat the remaining 1 tbls oil in a large nonstick skillet over med-hi heat. Add onion and saute for 5 mins. Add 1/2 tsp salt and garlic. Saute another minute. Stir in wine or broth and tomatoes, bring to a boil. Reduce heat to med and cook 20 mins, stirring occasionally. Stir in eggplant, basil, parsley, thyme, salt and pepper to taste. Serve over hot cooked pasta.
